Cooking On A Cold Day – Nuggets & Fries

I decided today to pull up the deep fryer and make a yummy lunch. Plenty of extras to stick in the freezer, and GFCF as well!

Chicken Nuggets
2 pounds ground chicken
Handful of bread crumbs (used homemade)
Handful of corn meal (optional)
Salt and pepper

Mix and form into balls, mini patties, or whatever. Place in hot oil until golden brown. These are DELICIOUS!

French Fries
Peel and cut into desired size/shape

Place into bowl of warm water with about 1/4 cup sugar

Put fries into hot oil (about 350*) for about 2 minutes. Remove and place onto towel or paper towels.
After all fries have gone in once, heat oil to 375*.
Fries go back in until golden brown and crispy.

Drain and enjoy!
