Pancake Batter Donut Holes

Using an easy pancake mix (this one was GFCF, Bob’s Red Mill), a deepfryer, and a paper lunch bag with sugar..oh the goodness!

donut holesThis was so super easy, I wouldn’t mind doing this more often.

Follow the directions to make up the pancake batter. I added a splash of vanilla extract and used rice milk in my version.

I took a spoonful of batter (using another spoon to scrap into the deep fryer), and dropped it into the fryer. Let it brown up, drain (for less sugar coverage), or drop straight into the bag with sugar in it. Fold the top and shake (great for kids!).

Wow… those look so yummy. And I can’t believe so easy!! Definitely going to have to try this. *sigh* There goes the diet. lol

Do you think this would work w/the BRM gf flour mix? I don’t have any of the pancake mix on hand. Also – what is the BRM recipe? I can’t find it online.

Emily – - To use just the flour mix, use this recipe:
* 1-1/3 cups Gluten Free All Purpose Baking Flour
* 1 tsp Baking Powder
* 1/2 tsp Sea Salt
* 1/2 tsp Baking Soda
* 1 Tb Honey
* 1/2 tsp Vanilla
* 2 Tb Vegetable Oil
* 3/4 cup + 2 Tb Water, warm
* 2 Egg Whites, stiffly beaten (set aside)
I would also add a pinch of sugar and cinnamon, for a little sweetness and added flavor. Yum!
